Thank goodness it’s Friday…pancakes?

It’s the best I could do. And here they are, in all their healthified glory:

What I did:

  • 1/2 cup Aunt Jemima Original Pancake & Waffle mix
  • 1/2 cup fat free buttermilk
  • 3 tbsp egg whites (or 1 egg)
  • splash of vanilla

I greased up the griddle with some SBL and cooked these babies up til nice and bubbly! The result?

Pretty, pretty pancakes. But…how did they taste?

Well, with a little more SBL and a couple tablespoons of Grade A maple syrup (the real stuff!), they tasted purdy good.

The texture was a weeee bit off, but good enough to eat for sure.
